Gonzalez-Byass, Tio Pepe Dos PalmasDos Palmas, an eight year old Fino selected from a tiny number of casks in the Tio Pepe Solera still retaining a delicate layer of flor. More intense and much more concentrated than Una Palma. The flavour is fuller and drier and very long on the finish. Wonderful to drink on its own, but ideally needs a slice of dried jamn. Serve lightly chilled. A lesser known detail All the Gonzalez Byass Palmas sherries are bottled en rama, literally translating to

a touch of white pepper here lending edginess
